The Cornell Club’s Classic Apple Cobbler

Ingredients

Topping:

½ lb. butter
¾ cup sugar
½ tablespoon cinnamon
1 teaspoon nutmeg
1 ⅓ cups of all-purpose flour
2 cups store bought granola

Filling

6 each Granny Smith apples
½ lemon
⅓ cup sugar
1 tablespoon tapioca

Directions:

Preheat oven to 325 degrees

Make Topping:

  1. In a mixing bowl, cream together the butter and the sugar; mix until incorporated.
  2. Add the cinnamon and nutmeg; mix until incorporated.
  3. Add the 2 cups of roughly chopped granola and mix until incorporated.
  4. Add the flour and mix gently until incorporated and set aside.

Make the filling:

  1. Peel the apples and core out the seeds. Cut the apples into four equal parts and then cut the quarters into six pieces almost square-like chunks and place in bowl.
  2. Add the sugar, tapioca, and squeeze and strain the lemon over the apples, mixing gently.

 

Assemble the cobbler:

  1. In a 9x13 baking pan, add the mixed apples and spread evenly.
  2. Spread the cobbler topping on top of the apples until all the apples are covered.
  3. Bake for 40-45 minutes.
  4. Let cool but don't refrigerate.
  5. Scoop into individual bowls and serve warm with ice cream.
