Vegetable Quiche Ingredients: • 1 bag of frozen mixed vegetables • 2 whole eggs • 2 egg yolks • 1 pint of heavy cream or whole milk • 1 10oz bag of shredded cheddar cheese • 1 9inch or 10inch frozen pie shell Directions: • Preheat oven to 350 degrees. • In a mixing bowl, whisk together heavy cream or milk, egg yolks and whole eggs. Add cheese and frozen vegetables, and mix to incorporate. • Pour mixture into pie shell just below the top. The pie shell does not need to be precooked. • Carefully place quiche in the oven on a baking sheet in case of overflow. Bake for 45 minutes. • Let cool for 20 minutes until quiche has set.
