Want to really wow your guests? You can also use the shredded boar as a topping for your burger or grilled chicken sandwich! Directions: • Use your favorite BBQ rub, and spread the BBQ rub liberally on all sides. Keep it refrigerated for two hours or overnight. • In a large heavy pot or slow cooker with a little oil, lightly brown. Once it has browned, add the chicken stock and all ingredients except the cilantro to cover the pork. Let it simmer for around two hours or until it falls apart by shredding with two large forks. • Strain the liquid and set aside. • Shred the boar, then pour cooking liquid over the boar to add flavor. • Add cilantro and serve! • In a coated pan, heat tortillas prior to serving. Top the pulled boar with all your favorites such as cheddar cheese, sour cream, pico de gallo, thinly sliced radishes, and a squeeze of lime. Pulled BBQ Boar Version: • You can use the same cooking method as for the pulled boar, except you will omit the rubs, herbs, and spices. Cook as directed with chicken stock. Once the boar has been shredded, don’t return to the braising liquid. Instead, return to the pot and simmer with your favorite BBQ sauce. • Serve on a toasted bun with coleslaw and your favorite sides! “Game” for trying something new? Wild Boar Carnitas: • Five pounds of wild boar shoulder or butt • 1/2 cup BBQ Rub *consider adding 2 tablespoons of brown sugar if it’s not already a part of your rub • 2 ½ cups of chicken stock • 1 bunch roughly chopped cilantro • 2 limes • Tabasco to taste • 1 teaspoon red pepper flakes - optional • 1 jalapeno pepper sliced (or less based on heat preference)** Carnita Toppers: • Shredded cheddar cheese • Sour cream • Tortillas - preferably corn • Pico de gallo • Radishes • Wedges of fresh lime **Did you know that not all jalapenos have the same “ heat”?
