Ravines is a artisanal winery in the Finger Lakes region of upstate NY started in 2000 by Morten & Lisa Hallgren, a Danish Oenologist and his wife Lisa, a Chef and business partner. Morten was educated in Oenology and Viticulture in Montpellier, France but grew up on his family’s estate winery in the Côtes de Provence region, where he and Lisa gained experience and knowledge in all aspects of the wine business.
After working in different wine regions in France and the US, they came to the Finger Lakes in 1998 when Morten took a job as chief winemaker for Dr. Konstantin Frank. He and Lisa purchased a 17 acre plot of land bordered by steep ravines, which became the namesake of the winery. Morten is credited for introducing a new style of Finger Lakes Riesling, a bone-dry, mineral-tinged and terrior-driven style. They slowly built their vineyards to 130 acres from which they produce 25,000 cases annually and distribute throughout the country. Their oldest son, Max, is a PhD candidate in Mathematics at Cornell.
6:00pm hors d'oeuvres reception, 6:30pm tasting dinner. $70 per person, including tax and service charge. Advance reservations required by Tuesday, February 19th, at which point are considered final sale.
