How Oreos and Cornell Ice Cream Became Kosher, and other Kosher and Halal Tales 

The preparation of kosher and halal foods in the US is a major part of the food industry.  In a typical US supermarket about 40% of the packaged goods are kosher and/or halal.  However, making foods kosher and/or halal can be a challenge. Probably the most complex conversion to kosher was that by Nabisco (now Mondelez) to make its cookie lines across the US kosher. The project took about 3.5 years to accomplish and is an extreme example of the effort some companies will make to enter this market. The speaker will also regale folks with the tale of how Cornell ice cream (and other dairy products) became kosher.

Dr. Joe M. Regenstein is a Professor Emeritus of Food Science in the Department of Food Science. He is an Adjunct Professor in the Department of Population Medicine and Diagnostic Sciences and a member of the Program of Jewish Studies. Dr. Regenstein heads the Cornell Kosher and Halal Food Initiative (CKHFI) and teaches Kosher and Halal Food Regulations at Kansas State University (on-line). He received the College of Agriculture and Life Sciences' awards for (1) Efforts to Promote Multicultural Diversity and (2) the Outstanding Accomplishments in Science and Public Policy. Through the CKHFI he provides extension/outreach services to the kosher and halal foods sector and was a columnist for many years for KASHRUS Magazine. Dr. Regenstein was a member of the Food Marketing Institute and the National Council of Chain Restaurants' Animal Welfare Committee, which evaluated standards for all major food animals and the American Veterinary Medicine Association's first Humane Slaughter Panel. The Co-Editor-in Chief of Food Bioscience, the first peer-reviewed English-language food science journal originating in China, Dr. Regenstein has also spoken extensively on kosher and halal on every inhabited continent. A recipient of the (1) Bor Luh International and the (2) Elizabeth Stier Humanitarian awards from the Institute of Food Technologists, Dr. Regenstein is this year's recipient of the IUFoST Lifetime Achievement Award (International Union of Food Science and Technology).
