Protector Cellars, located in Santa Barbara County, CA, is the world's first climate positive (beyond carbon neutral) winery. Their mission is to give wine drinkers an environmentally responsible option that will help preserve the world's winegrowing regions in the face of climate change. By examining every part of the wine production process, they are able to make choices that result in the lowest possible greenhouse gas emissions, even if these decisions break with industry norms. Then, through agroforestry partnerships, they go beyond offsetting their remaining carbon footprint, to have a net positive impact on the environment. Protector Cellars focuses on balanced, food-friendly wines from the Central Coast of California, with all of their grapes grown on certified sustainable vineyards.

Alex Katz '02 made wine in California's Central Coast for more than decade under the labels La Fenetre, Timbre, and Mandrake, before launching Protector Cellars in 2020. He saw the immediate impacts that climate change was having on the wine industry, from droughts to heat-spikes to wild-fires and he felt the need to address them head-on. Using the knowledge and relationships he accumulated while making high-end wines from some of California's most famed vineyards, Alex is able to produce high quality wines from great vineyard sites without the premium price tag. Since its launch, Protector Cellars has been featured in many publications including Wine Spectator, Wine Enthusiast, and Forbes. The wines are extremely limited production, with only 1,000 total cases produced in 2020.
